Crispy, Golden Air-Fried Chicken

We recently bought into the newest kitchen gadget craze: Air Fryers. Mon petit chou hails from a town near Cincinnati, and grew up eating a lot of Southern, fried foods being right across the border from Kentucky. While we treat ourselves sometimes to fried foods, we tend to try and stay away from them on a regular basis. But sometimes, you just really want that juicy, crunchy, crispy chicken, without being soaked in oil. I was playing around in the kitchen one night, making dinner, and accidentally found ourselves the perfect recipe. Winner, winner, chicken dinner!! This can be made with any cut of the chicken, and can even be baked or “pan fried” with a tiny bit of oil on the bottom of the pan. However, my favorite way to make this is in the air fryer! It turns beautifully golden, with those darn brown spots that are extra crunchy, all the while juicy and tender inside. So hurry your butt to the store (or Amazon) and get yourself one of the beauts, you won’t regret it!

What you need...

4 lb chicken (this works with whichever type of cut you prefer)

1/2 cup plain greek yogurt

1 whole egg

2 tsp onion powder

1 tsp garlic powder

1/2 tsp salt

1/2 tsp cracked pepper

1/2 tsp smoked paprika

1 cup panko breadcrumbs

1/2 cup parmesan cheese

  1. Mix together the greek yogurt, egg, onion and garlic powder, salt, pepper and paprika in a bowl. On a plate, combine the panko breadcrumbs and parmesan cheese.
  2. Pat the chicken dry. Coat the chicken in the yogurt mixture, then evenly coat in the breadcrumb mix.
  3. Cook the chicken by one of the following methods: Air Fryer - select the appropriate chicken selection, lightly spray the chicken with oil on both sides, and the bottom of the fryer basket; mine is 370 degrees Fahrenheit for 22-30 minutes, flipping halfway through. Oven Baked -  spray a baking sheet with oil and bake at 375 degrees Fahrenheit for 25-35 minutes, flipping halfway through. Make sure its nice and golden brown on each side. Be sure the internal temperature is at least 165 degrees Fehrenheit. Enjoy!
